Gluten

4 cups gluten flour
2 cups water
1 tsp salt

Mix all together in a large bowl. Knead for 10 minutes adding more
flour as neccessary. Let rest for 30 min. to develop the gluton.
Cover with water and squeeze like a sponge changing the water
frequently. You can do this in half batches because it takes a lot
of squeezing. It will break up into nuggets of assorted sizes, I
like them the size of walnuts. You want most of the white color to
come out. What is left is kind of a grayish clear stuff. You end
up with about 1 1/2 - 2 cups of mock meat. You can store it in jars
and cover with beef broth or chicken broth and it takes on the
flavor of what you store it in. Or store in salted water. It keeps
fairly well for about 3 months in fridge.
