Quick Homemade Gluten

2 cups gluten flour
1 cup cool water or seasoned stock powder)
1 cup plain soymilk

Place flour in large bowl,add all of the liquid at once. mix
immediately and vigorously w/ a fork to form dough. When dough
becomes thick and stiff, knead it with your hands 10-15 times.

Let the dough rest 2-5 minutes, then knead a few more times. Allow
gluten to rest about 15 minutes.

At this point gluten can be cooked, refrigerated, or frozen.
