TVP GRAVY

1 cup tvp
7/8 cup water
1 medium onion
oil for frying
1/2 cup whole wheat flour
1/3 cup cold water
3 cups soymilk
1/4 cup nutritional yeast
1 tsp salt
1 tsp celery seed
2 tblsp margarine
pepper to taste

Soak 1 cup TVP in 7/8 cup boiling water. Chop and saute onion in
oil. Remove from heat and add flour, then whisk in the 1/3 cup
cold water. Add soymilk, and heat on medium until gravy thickens.
Cook for 10 more minutes over a low heat. Whisk in the tvp and
the rest of the ingredients and serve. (Potatoes are recommended
for this recipe).
