MOCK SAUSAGE GRAVY
(Makes 1 qt)

1 cup tvp
7/8 cup boiling water
1 tablespoon tamari

4 cups vegetable stock
2 tsp sage
1 tsp marjoram
1/2 tsp salt
1/4 tsp pepper

Stir and set aside tvp, water and tamari. Toast 1/2 cup whole
wheat flour until you can smell it, stirring occasionally to avoid
burning it. Stir in 1/4 cup oil or margerine.

Slowly stir in stock and spices, whisking all the while.

Simmer gravy, and when it bubbles, add tvp. This can be made the
night before and used to serve over biscuits for a hearty breakfast.
