Veg Gravy
1 onion 1 whole clove garlic 1 heaped tablespoon brown sugar flour soy sauce 1/2 pint wine 1 pint vegetable stock margarine (or butter if you're lacto-ovo) flour
Mince the onion very fine, and sweat in the margarine on a low heat until soft. Be careful not to burn it. Sprinkle the brown sugar over it, and continue to cook for another 10 minutes. Stir in about a tablespoon flour, simmer for a minute or so. Add the wine, stock, garlic clove, and soy sauce (to taste). Simmer until thickened. If it gets too thick, add more water; if it's too thin, mix a little flour with water to a paste. When ready to serve, remove the garlic clove, and strain.
