Veg Gravy

1 onion, chopped very fine
1 clove garlic, peeled, left whole
Oil or margarine for frying
1 tbsp brown sugar
1/2 pt red wine
1 pt veg stock
soy sauce
flour

Fry the onion in the oil on a low heat for about 10 minutes until
just transparent. Sprinkle the sugar over it and carry on frying
until it caramelises - another 5 - 10 minutes. Add the wine, stock,
soy sauce, and garlic clove. Mix up some flour into a paste with
water and stir it in for thickening Simmer for 10-20 minutes.

Remove the garlic before serving; you could also sieve it if you
wanted.

You could use less wine and make up the volume with stock; or
replace it altogether with stock and a decent splash of vinegar.
