whisk over medium heat in a BIG pot, (soy milk really boils over
so you need it) add 8 cups of water. Stir constantly with the wire
whisk until it starts to boil (you will know it is boiling when
the foam starts rising higher and higher) . Remove from heat. Let
cool for 10 mins Add a tablespoon of vinegar. (hopefully someone
can tell me a better coagulant).

Strain all the curds through several layers of cheesecloth or a
clean dishtowel lined in a sieve. dump the curds in a dish and
place something heavy on top to ''firm'' up the tofu.

Refrigerate and use when you want to.

Now, this is coming from a total novice who just experiments in
her kitchen every now and then. Hopefully there will be an expert
who can tell me how to improve on this, without (i hope) having to
buy any expensive fancy equipment.
