Homemade Tofu
Take about 1/2 - 3/4 cup of soy flour, and stirring with a wire whisk over medium heat in a BIG pot, (soy milk really boils over so you need it) add 8 cups of water. Stir constantly with the wire whisk until it starts to boil (you will know it is boiling when the foam starts rising higher and higher) . Remove from heat. Let cool for 10 mins Add a tablespoon of vinegar. (or other coagulant).
Strain all the curds through several layers of cheesecloth or a clean dishtowel lined in a sieve. Dump the curds in a dish and place something heavy on top to firm up the tofu. Refrigerate.
