Kadu fugath (Pumpkin or marrow foogath)
Foogaths are vegetables fried with onions and a little masala. The
following recipe comes from Maharashtra.
3 tbsp vegetable ghee
1 onion
1/2 tsp turmeric powder
1/2 inch (15mm) piece ginger
2 cloves garlic
1/2 tsp paprika or chilli powder
1lb (450g) pumpkin or marrow, peeled and cubed
juice of 1/2 lemon
1/2 tsp salt
Heat the ghee and lightly fry the onion. Grind together the turmeric,
ginger, garlic and paprika to form a paste. Stir this into the fried
onion with the pumpkin pieces, lemon juice and salt. Add a little
water and cook over a medium heat until tender.
