(serves 6; prep time 1:30)

2 10-oz. pkgs chopped frozen spinach, thawed, drained and squeezed
32 oz. spaghetti sauce
3 8-oz. cans tomato sauce
1 lb. lasagna noodles
20 oz. shredded mozarella cheese
10 oz. shredded cheddar cheese
32 oz. small curd cottage cheese
3 eggs

Preheat oven to 350 degrees. Thoroughly drain and squeeze spinach.
Mix together spinach, cottage cheese and eggs in medium bowl; set
aside. Set aside one can of sauce and 8 oz. mozarella.

In large roasting pan (11w x 16d x 3h), layer the ingredients (3-4
layers) in the following order: spaghetti & tomato sauce, lasagna
noodles, spinach mix, mozarella, cheddar. Finish off the top with
reserved tomato sauce. Sprinkle on reserved mozarella.

Bake for 45 minutes or until a knife or fork can be easily inserted
in the noodles. Allow lasagna to firm for 15 minutes before serving.
