Lentil Loaf

1 medium onion
2-3 cloves garlic, crushed
2 stalks of celery
2 teaspoons sage
3 cups cooked lentils
3 cups cooked wild rice
1/2 cup chopped walnuts
1/4 cup whole wheat breadcrumbs
2 Tbsp. vinegar
2 egg equivalents
2 Tbsp. whole wheat flour
freshly ground pepper
sea salt

Preheat oven to 350 degrees. Finely chop celery and onion. Spray
frying pan with non-stick spray (or oil/butter if preferred) Saute
onion, garlic, and celery till soft, add sage. Combine all ingredients
in large bowl and mix well. Spray a loaf pan (or butter it) with
non-stick spray and fill with the mixture. Press down as you would
with beef. Bake 30 minutes covered. Then, 10 minutes uncovered.
Let stand for 5 - 10 minutes before cutting and serving.
