Print this Recipe    Lentil Nut Loaf

1 onion, chopped fine
1 Tbs. oil
2 cups cooked, drained lentils
1/2 cup whole wheat bread crumbs (I use wheat flakes)
1/2 cup choped toasted walnuts or sunflower seeds
1/2 tsp. sage or thyme
2 Tbs whole wheat flour
2 eggs, beaten (egg substitutes work great)
1/2 cup broth or water
2 tsp vinegar
2 tsp shoyo (or soy sauce)
1 Tbs. toasted sesame seeds

Preheat oven to 350 F.

Saute onion in oil until translucent and slightly browned.

Mix ingredients except sesame seeds and place in a greased loaf
pan. Sprinkle top with the sesame seeds. Bake for 30 minutes
covered, then for 10 minutes uncovered.

Makes one loaf.

Beware egg substitutes, November 13, 2005 - 04:24 PM

Unfortunately, this loaf didn't really solidify in the oven. I'm afraid that egg replacers (I used flax meal) didn't do the trick to binding and aiding the cooking of the loaf. However, even as mushy as it was, it was still pretty delicious. I added nutritional yeast and hemp seeds.
