Lentils

1 1/2 cups lentils
6 cups water
1/2 cup chopped dried apricots or golden raisins

1 cup chopped onion
1 1/2 cups chopped tomato
2 poblano peppers, chopped
1 tsp cumin
1/2 tsp cinnamon
1/2 tsp cayenne
1 tablespoon paprika
1 tsp salt
chopped fresh parsley

1 cup rice

Rinse the lentils cover them with water and bring them to a boil.
Reduce heat. At this point, add everything but the rice and parsley
and cook until done.

In the meantime, cook the rice in the microwave (2 cups water to
1 cup rice) and stir it into the lentils with the parsley.
