Lentil & Barley Casserole
(Serves two)

2 oz brown lentils
2 oz pot barley
2 carrots, peeled and sliced
1 medium onion, peeled and sliced
1 small can chopped tomatoes
1 pt (UK) vegetable stock
1 dessertspoon hot paprika
1 heaping teaspoon miso

2 oz wholewheat flour
1 oz vegetable suet
1/2 tsp baking powder
a little salt
about 1/2 tsp mixed herbs

Mix the dumpling ingredients with enough water to make a firm dough.
Roll into balls about 1" across (about eight).

Put all the ingredients except the miso and dumplings into a
casserole dish. Cook in a medium oven (about 350F/180C/gas mark 4)
for about 1.5 hours. Add more hot water if required. Stir in the
miso, and then drop the dumplings in. Cook for a further 20 mins.
Serve with peas/green beans/cauliflower or whatever takes your
fancy.
