Non Dairy Mac & Cheese

2 cups dry macaroni or mostaciolli
12 oz tofu
1 tsp chili powder
1 tsp dry mustard
1 tsp garlic salt
2 shallots, minced
2 Tbsp oil
1/2 pound sliced crimini mushrooms
2 cups soy cheddar, grated
1 oz sun dried tomatoes, soaked for 1/2 hour and sliced

Cook the pasta. Drain and rinse. Preheat oven to 350.

In a blender or food processor, grind the tofu until creamy and
smooth. Add the chili powder, mustard, and garlic salt.

Saute the shallots and mushrooms in 1 Tbsp of the olive oil.

Mix the noodles with the creamed tofu, the mushrooms, the sun dried
tomatoes, and 1 1/2 cups of the soy cheese. Spread into a greased
9 x 13 inch glass pan and top with the last 1/2 cup of soy cheese.
Add water and bake uncovered 30 minutes, until the top is golden
and crusty.
