Herb Mashed Potatoes
6 small/medium red potatoes, quartered 2 tbsp. chives 4 cloves of garlic, peeled (more or less, according to taste) soy or rice milk non-dairy butter substitute Salt and pepper
Boil the potatoes and garlic together in the same pot until the potatoes are very tender.
Drain water. Mash potatoes and garlic together.
Add milk and butter to taste, and stir the potatoes briskly until they are fluffy.
Douse with chives, salt (or garlic salt) and freshly ground black pepper to taste.
Variation: This also works well with minced red onion added in.
