Mex-veg Pasta
1/2 lb. fettucini or linguini 1 T olive oil 1C chopped bell pepper 1 clove garlic, minced 1/4 T oregano 1/2 C canned black beans, rinsed and drained 1/4 C corn kernels 1 T lime juice
1C chopped onion 1/4 C minced green chilis (jalapenos work well) 1/8 t chili powder 1C chopped tomatoes (canned are okay) 1/2 T minced cilantro salt if desired
Cook pasta according to package directions; drain and set aside.
Heat oil in skillet over medium heat. Add onions, peppers, and chilis; saute, stirring frequently, 2-3 minutes. Add garlic, spices, tomatoes, beans, and corn; saute 2-3 minutes more.
Add pasta and cilantro; saute about 1 minute. Sprinkle lime juice over pasta and add salt if desired. Serves 2.
