Millet Pancakes
1 cup cooked millet 1/2 cup spelt flour or whole wheat 1 apple, grated coarsely 1 or 2 eggs pinch sea salt teaspoon cinnamon
Mix all the ingredients together. This batter will be quite thick and heavy, more like a dough, but comes out nice and light. Spoon large spoonfuls on a hot oiled pan and press into shape with the back of the spoon. Flip when brown on one side, and brown the other. Serve with maple syrup.
