Old Fashioned Mince Pie
1 cup TVP granules 1 cup hot water 4 cups tart apples, peeled and diced 1 cup raisins or currants (half and half is good) 1/2 cup apple cider 1/2 cup packed brown sugar grated rind and juice of 1 orange grated rind and juice of 2 lemons 2 TB vinegar
1 tsp. each cinnamon, nutmeg and mace 1/2 tsp. cloves 1/2 cup chopped walnuts (optional) double crust for 9" pie
Place in a large kettle tvp, water, apples, raisins, cider, sugar, juices and vinegar.
Bring mixture to a boil, reduce heat and simmer gently until apples are soft, about 20 minutes.
Stir in spices and nuts.
Cook 5 minutes more, then stir in 2 TB of orange marmalade. Keep in a covered jar in refrigerator until ready to use. Makes 1 quart.
Line a 9" pie plate with the bottom crust, fill with mince mixture, top with crust, seal edges by crimping together, slash top in 6 places. Brush a little milk or soymilk onto crust. Bake at 375 degrees about 1 hour until nicely browned. If pie begins to brown too soon, lay a piece of foil lightly over top.
