Maryland-Style Tofu Cakes
1 1/2 lb soft tofu 5 Tb. extra-virgin olive oil 3 T. lemon juice (fresh if possible) 2 T. spicy brown mustard 2 T. mayonnaise 1/4 cup finely chopped fresh parsley 1/2 tsp. thyme 1/2 tsp. Old Bay Seasoning salt and pepper 1/4 cup minced red onion 2 1/2 cups plain dry bread crumbs
Put all ingredients except onion and bread crumbs into Cuisinart (blender, whatever - I altered this recipe to fit my own equipment!) Blend until smooth (about 30 seconds.)
Put into bowl and add onion and 2 cups of bread crumbs. Take about 1/2 cup of tofu mixture and form into round cake. Coat with rest of bread crumbs. Preheat oven to 350 degrees.
Brown cakes (carefully!) in skillet until golden brown. Bake on cookie sheet for 20 minutes, then turn carefully and bake another 20 minutes. Serve hot.
(For those of you not from the US, Maryland is famous for its crab cakes, flavored with Old Bay Seasoning. I seem to be out of Old Bay so I can't look at the tin, but I believe it is basically a spice mix.)

I made these and my 4 kids ages 6 to 13 ate them up within minutes. Definately a hit here. This recipe will be going into our file. I think you could skip the baking step altogether, if you did't mind them falling apart - it would save 40 minutes.
