basic gluten, made with unbleached white flour

4 cups water
2 T MSG
1 T sea salt
2 tsp corn oil

2 c cashew milk
1/4 tsp cayenne pepper
1/4 tsp sea salt

2 cups corn flour, cornmeal, Cream of Wheat, Malt-o-Meal, or cracker crumbs
1/4 tsp cayenne pepper
1/4 tsp sea salt

Cook gluten as directed in your gluten recipe, then slice 1/4 to
1/2 inch thick. Combine water, MSG, salt and oil and simmer for
5 minutes. Boil the gluten in the broth for 30 minutes. Let soak
overnight in the broth. Drain well. Dip each piece in dip mixture
and roll in crumbs. Deep fry at 350F until light brown.
