Tofu "Ricotta" filling

1 lb. hard tofu, drained, squeezed, and crumbled 1/3 cup olive oil 1 tsp salt 1 tsp garlic powder 1 tsp onion powder 1 tsp dried basil 1 tsp dry oregano
[Squeezing the tofu gets rid of some of the liquid. (I use the tofu which comes in the platic, water-filled packages.) I usually just break the tofu into hand-sized chuncks and squeeze over the sink. You want it to be crumbled anyway. ]
Mix tofu and all other ingredients in a bowl, toss well. Adjust seasonings.
Use in lasagna or any other italian recipe calling for a cheese filling.
Makes about 3 cups filling.
