Mock Tuna Salad Sandwich black eyed peas, cooked finely chopped celery finely chopped onion (bermudas are best) red/green pepper mayo (or 2/3 mayo and 1/3 yogurt or mayo substitute) dash dry mustard cayenne salt pepper dill
Mix all together, chill. Serves best in pita or on substantial whole grain bread, with a leaf or two of lettuce and cilantro or parsley garnish.
Keeps up to a week in the fridge.
