SEARCH RECIPES: LOCATION: Recipes >> Vegetarian >> Mole Posole    Mole Posole Mole Posole 1/2 onion, chopped 1 green bell pepper, seeded, diced 1 serrana, seeded, minced 2 tsp veg. oil 15-oz can chopped tomatoes and juices 15-oz can kidney beans, rinsed, drained 15-oz can of white hominy, rinsed, drained 2 Tbs mole sauce 1 cup water Saute onion and peppers until onion is soft. Add all other ingredients. Bring to a boil, then simmer for ten minutes. Makes about 8 cups. Serve with tortilla chips. This doesn't use a lot of mole, like the big, drippy plates that I love, but it is a good stew for wintertime. It reminds me of vegetarian chile. I loved it, and my 2-year-old loved it, so it is not terribly spicy. I added more mole to the second batch to add more flavor.
