Fast Moroccan Feast

1 Tablespoon cooking oil
1 small onion, sliced thin
1 small red bell pepper, sliced
1/2 teaspoon cinnamon
1 Tablespoon ground cumin
1/8 teaspoon red pepper flakes
2 canned tomatoes, with juice
1 Tablespoon lime juice
1/8 teaspoon saffron threads
1/2 cup new potatoes, diced
1/2 cup carrots, diced
1/4 cup water
1 cup garbanzo beans, cooked
1/2 teaspoon salt

Heat oil over moderate heat. Add ingredients to red pepper flakes.
Cook until vegetables are soft, about 5 minutes. Add next ingredients
to water. Simmer, stirring occasionally for 20 minutes. Stir in
garbanzo beans and simmer 5 minutes longer.

Serve with whole wheat cous cous.
