VEGAN: Moussaka

2 medium eggplants
3 medium potatoes
tomatoes
3 cloves garlic
1 medium onion
dash chilli sauce
olive oil

Sautee the onion and the garlic in some olive oil. Meanwhile slice
up the eggplant and the potatos. Fry the eggplant until lightly
brown on both sides, boil the potatoes so that they are cooked but
not breaking up. Either dice up or grate the tomatoes into the
onion/garlic and add in the chilli sauce, to taste.

When the tomato mixture is warm and not so runny, put some in the
bottom of the baking dish. Then put:

layer of eggplant
layer of sauce
layer of potato
layer of sauce
layer of eggplant

etc.

End with a layer of tomato. Bake at 375F until bubbly and top is
browned.
