Mushroom Patty
8 portabello mushrooms 1 c olive oil 1/3 c fresh lemon juice 5 cloves fresh minced garlic fresh basil, chopped (handful) fresh oregano, chopped (1/2 handful) fresh parsley, chopped (big pinch) fresh thyme, chopped (pinch) salt and freshly ground black pepper mozzarella cheese, kaiser rolls, lettuce, and tomato (for each mushroom)
Brush away any dirt before you cut away the mushroom stems. Mix the oil, lemon juice, garlic, fresh herbs, salt and pepper to make a marinade. Add the mushrooms and the sliced mozzarella; marinate at room temperature for about an hour.
Grill the mushrooms 2 minutes each side. Allow to cool for 5 minutes. Serve on toasted rolls with lettuce, tomatoes and marinated cheese.
Serve it with onions, and a chopped veggie salad.
