VEGETARIAN MUSHROOM BURGERS
1 large onion, finely diced 2 cloves garlic, crushed 250g flat or brown mushrooms 1 1/2 cups wholegrain breadcrumbs 1 Tbsp lemon juice 2 Tbsp chopped parsley 1 tsp chopped sage or thyme 1 tsp soy sauce 3 - 4 Tbsp polenta
Saute the onion and garlic in oil until the onion is soft. Add the mushrooms and cook until soft and all the liquid has evaporated. Add the breadcrumbs, lemon juice, herbs and soy sauce. Divide into four portions and mould into patties. Dust with polenta. Barbecue over medium heat for about 3 - 4 minutes each side. Or cook either in a little oil in a frying pan, or under a grill.
