Veg Stroganoff

1 tablespoon oil or margarine
1 small onion, finely chopped
1/2 lb mushrooms, halved or more
1-2 cloves garlic, crushed
2 tablespoons fresh or 1 tablespoon dried parsley
3 dashes veg Worcestershire sauce (a bit of Tamari would be fine too)
1 cup cottage cheese (can be low or non-fat)
1/2 cup plain yogurt (can be low or non-fat)
salt and pepper to taste

Saute onion, mushrooms and garlic in the oil until onion is
transparent. Add parsley when the onion is almost done. Stir in
Worcestershire (or Tamari).

In a food processor or blender, process cottage cheese and yogurt
until very smooth. Remove vegetables from heat and stir in cottage
cheese-yogurt mixture. Add salt and pepper to taste. Serve
immediately over hot noodles.
