Print this Recipe    Cashew Nut Roast with Herb Stuffing

1/2 c. margarine
2 large onions, finely chopped
3 cups unroasted cashews
1 1/2 cups bread
3 large cloves garlic
1 cup water or veg. stock
nutmeg
2 tbsp. lemon juice

3 cups bread crumbs
2 small onions, grated
1 cup margarine
1/2 tsp each thyme and marjoram
3 tbsp. chopped parsley

Melt margarine in a medium saucepan; add onion, saute 'til tender.
Remove from heat. Grind cashews in food processor with bread and
garlic, add to the onion, together with the water/stock, salt,
pepper, nutmeg and lemon juice to taste. Preheat oven to 400F.

Mix stuffing ingredients. Put half the cashew mixture into a
greased pan, top with stuffing, then rest of nut mixture. Dot with
margarine.

Bake about 30 minutes or until firm and lightly bronwed. Cover
with foil if it browns too fast. Cool a minute or two, loosen with
a knife and turn out.
