Basic Pancakes

1 1/2 cups whole wheat pastry flour
1 T olive oil
1/4 tsp salt
1 3/4 cups soy milk
3 tsp baking powder

Combine the dry ingredients in one bowl. Whip the soymilk and oil
for about one minute, and then pour into the flour mixture. Heat
griddle and brush with oil. Pour 1/4 cup batter for each pancake
and cook a minute or 2 per side.
