Hi-Pro Pancakes makes 24 4-inch pancakes 1 cup whole wheat flour 1 cup corn meal 1 cup oat bran 1 3/4 teaspoon baking powder 1 teaspoon salt 3 tablespoons sunflower seeds 3 tablespoons sesame seeds, ground 2 tablespoons nutritional yeast (optional) 4 tablespoons cold pressed vegetable oil 2 tablespoons honey, barley malt of rice syrup or maple syrup 1 1/4 cup mild soy milk or water
Combine all dry ingredients in a mixing bowl, mix well.l
Combine oil, sweetener and soymilk, let stand for 5 minutes or until sweetener is dissolved. Whisk well.
Pout liquid ingredients into the dry ingredients, mix well.
Coat the bottom of a stainless steel, enamel, or cast iron skillet or griddle with a very thin coat of liquid lecithin (or spray with non stick spray). heat skillet or griddle until a drop of water skips. Pour out 4 inch pancakes and cook until the top begins to bubble. Turn over and brown the other side.
