Pasticio

3 cups cooked macaroni
2 eggs lightly beaten
1/3 cup parmesan cheese

1 1/2 cups meat substitute
2 cup sliced mushrooms
1 cup chopped onions
1 3/4 cup tomato sauce
1 tsp garlic powder
1 tsp each oregano and basil
1/4 tsp salt
1.4 tsp pepper
1/8 tsp cinnamon

1/3 cup margarine
1/3 cup flour
1/4 tsp salt
1/4 tsp nutmeg
3 cup milk
2 eggs lightly beaten
1/3 cup grated parmesan cheese

Combine macaroni, eggs and cheese and spread in a greased 9x13"
pan. Set aside.

Brown and cook meat sub, mushrooms and onions until tender. Stir
in tomato sauce and seasonings. Simmer uncovered while preparing
topping.

Melt margarine in a large saucepan. Stir in flour, salt and nutmeg.
Add milk and cook while stirring until thickened and bubbly. Stir
this mixture into beaten eggs and return to saucepan. Cook 1 minute
more.

Spread meat filling over macaroni. Spread topping over all and
sprinkle with parmesan cheese. Bake in pre-heated oven at 350F
for 35-40 minutes until golden brown and bubbly. Freezes well.
Makes 8-10 servings.
