Vegan Pie Crust

1 cup whole wheat flour
one half teaspoon of salt
one half cup canola oil
3 tablespoons ice water (must be ice)

In large bowl, sift together flour and salt. (hard to do with
whole wheat, but give it your best. pour oil into cup. add ice
water, do not stir! dump oil mixture all at once into flour mixture.
stir lightly with a fork. form into a ball, flatten ball onto sheet
of wax paper with you hand. lay other sheet of wax paper on top of
ball. roll out with rolling pin to edges of wax paper, it will be
the right size for one nine inch crust. peel off top sheet of wax
paper and fit dough, paper side up into your pie pan. remove paper.
finish edges but squeezing with fingers to shape.

Double recipe for double pie.

I also like to add cinnamon or cardamom to the flour for sweet
pies. rosemary, black pepper, thyme or marjoram to savory pies.
