Potato Pancakes 01

Vegan Flax Potato Pancakes 1/4 cup flax seeds 1/4 cup plus 2 Tbsp water 1/4 cup soy milk or rice milk 1/4 tsp baking soda (optional) 2 Tbsp flour 2 grated potatos (about 2 cups) 1 Tbsp grated onion salt and pepper canola oil for frying apple sauce and/or fake sour cream to put on top Put the flax seeds, water, soy milk, and soda in a blender. Keep blending and scraping the sides down with a rubber scraper until the seeds are all chopped up and it's nice and smooth. This is the equivalent of two eggs plus 1/4 of milk. Another method, which I haven't tried, is to put the seeds in the blender dry and make flax seed meal that way, then add the wet ingredients and probably blend some more.
Mix the flax seed concoction with all the other ingredients. (except the oil and toppings, of course.) Heat a frying pan with plenty of oil so the pancakes don't stick. Make sure it's all good and hot before you put the batter in the pan. Put the batter in the pan and spread it so it's not too thick. After cooked on one side, flip them over. When they're all cooked and not gooey anymore (may have to re-cook the first side) serve them with the apple sauce or fake sour cream.
