Potatoes Gravy

Potatoes in their own Gravy
5 cups diced potatoes 2 1/2 cupes flavoring broth of choice 1/4 tsp sea salt 1/2 cup chopped onion 1/2 cup sliced mushrooms or more 1 1/2 tsp nondairy margarine 2 T unbleached white flour 1 1/2 tsp nutritional yeast 1/2 tsp garlic powder 2 tsp soy sauce 1/8 tsp freshly ground black pepper
Cook the potatoes in the broth and salt until they are tender and drain them, retaining the liquid. Saute the onion and mushrooms in the margarine until the onion is transparent. Stir in the flour, yeast, and garlic powder. Whisk in the potato liquid until all is smooth. Add the soy sauce and pepper and cook until thickened. Combine with the potatoes and serve.
