Pumpkin Pie
Makes 6 servings

1 (10.5-ounce) package extra-firm silken tofu (Mori-Nu brand)
1 (15-ounce) can pumpkin
3/4 cup sugar
Dash salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
9-inch unbaked pie shell

Blend tofu in food processor or blender until smooth. Combine all
filling ingredients and mix until thoroughly blended. Pour into
pie shell. Bake at 425 degrees F for 15 minutes. Lower the heat
to 350 degrees F and bake an additional 40 to 50 minutes or until
pie is set.

Note: Knife will not come out clean.
