Pumpkin Pie

2 cups fresh-cooked pumpkin (can substitute a 15 oz. can of puree)
12 oz. firm or extra-firm tofu
1 cup organic sugar or turbinado
2 Tbsp. molasses
2 Tbsp. oil
1 tsp. vanilla
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. fresh-grated nutmeg
1/2 tsp. salt

Throw everything in a food processor or blender and puree until
smooth. Pour into pie crust and bake at 350 degrees for about an
hour. Pie is done when surface begins to crack.
