Quinoa Stirfry 02

STIR FRY QUINOA AND VEGETABLES Servings: 4
1/4 cup vegetable broth, vinegar or wine 1 carrot, peeled and diced 1/2 red bell pepper diced 1/2 green bell pepper diced 1/2 yellow bell pepper diced (or corn) 1 stalk celery, diced 1 clove garlic, minced 1 cup cooked black beans, drained 2 cups cooked quinoa salt and pepper 1/2 cup chickpeas, roasted, salted, chopped 2 tbs fresh herbs, chopped
Heat the broth, vinegar or wine in a large skillet. Add the carrot, bell peppers, and celery and saute for 5 minutes or until tender but still crisp. Stir in the garlic, black beans and quinoa and cook until for a few minutes or until heated up. Season to taste with salt and pepper. Remove skillet from the heat and stir in chickpeas and herbs.

Unusual combination in a protein-rich stir fry, May 11, 2005 - 02:46 PM

I'm always one to try new and interesting recipes, particularly vegetarian ones with unusual combinations. It may put some people off to get all the ingredients, but it is just a matter of planning.
I have edited this recipe, adding onion, garlic, some chopped nuts and recommending to serve it with hot sauce.
