Chard, Browned Onion and Queso Fresco Tacos
1 big bunch of chard, thinly sliced and very briefly steamed 1 large onion, thinly sliced 2 cloves of garlic, minced 1 c queso fresco, crumbled fresh corn tortillas some sort of fresh or cooked salsa
Saute the onion over med/high heat in a big cast iron pan (or any frying pan) until soft and beginning to caramelize (rich, shiny brown color), add garlic and saut briefly until golden. Turn pan to high, add chard and stir-fry until chard is warmed and everything is mixed.
Eat immediately in steamed corn tortillas, garnished with queso fresco and salsa.
