2-3 tablespoons olive oil
2 onions, chopped
4 cloves garlic, crushed
1 tsp. ground cumin
1 tsp. ground coriander
chili powder to taste
18 oz (500 gm) cooked red kidney beans
Heat the oil and add the onion, garlic, cumin, coriander, and chili
if used. Stir fry 2 minutes. Add the beans and stir until everything
is heated through. Mash some of the beans if you wish.
Use to fill tortillas, adding grated cheese, chopped fresh vegetables
and salsa to taste.
