REFRIED RED LENTILS
1 cup red lentils, picked over 3 cups water 1 teaspoon ground cumin 1 teaspoon chili powder 1 teaspoon salt 1 cup chopped onion 1/4 cup olive oil 1 large garlic clove, minced 2 teaspoons fresh lime juice 2 tablespoons finely chopped fresh coriander toasted pita triangles or tortilla chips if desired
In a large bowl wash lentils in several changes cold water until water runs clear and drain in a sieve. In a saucepan combine lentils, water, cumin, chili powder, and salt and boil lentils, whisking frequently, until smooth, about 35 minutes.
While lentils are boiling, in a large skillet cook onion in oil over moderate heat, stirring, until it begins to turn golden. Add garlic and cook mixture, stirring, 5 minutes. Add lentil puree, lime juice, coriander, and salt and pepper to taste and combine well.
Serve as a dip with pita triangles or as a side dish with meat, poultry, or fish. Makes about 2 cups.

This recipe is so good. I don't think i'll ever go back to refried beans again. I will say it was a tiny bit dry for my liking but add a little water and I was good. This recipe was easy to make. I altered it a little bit. I used peanut oil instead of olive, already minced garlic, lemon juice instead of lime, and ground coriander that wasn't fresh. I will say it's not that visually appealing but it makes up for it in taste. Instead of whisking the lentils until they are smooth, use a hand mixer.
