Rice Pudding 05

Rice and Raisin Pudding 2 cups cooked brown rice, cold 2/3 cup thick nut milk or sweet fruit juice (apple, pear, peach or apricot) 1/2-2/3 cup maple syrup or fruit concentrate 2 Tablespoons arrowroot powder 2-3 teaspoons grated lemon rind or orange rind 2 teaspoons real vanilla 1-1 1/2 teaspoons cinnamon 1 teaspoon guar gum or xanthan gum 1/8 teaspoon sea salt Optional: 1/2-2/3 cup raisins, currants, chopped dates or chopped nuts Preheat oven to 375 degrees F. Combine all ingredients carefully with a fork so as not to mash the rice. Mix thoroughly. Spread the mixture in a lightly oiled 9inch X 9inch casserole dish and bake 35-45 minutes, uncovered, untill "set" and somewhat firm. Serve dessert hot or cold.
