BROILED ZUCCHINI PARMESAN

1 teaspoon olive oil
1/4 cup minced onion
1 clove garlic, minced
1 cup grated or thinly sliced zucchini
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
3-4 tomato slices
2 slices multigrain bread
1 tablespoon grated Parmesan cheese
pepper

Heat the oil in a nonstick skillet over medium heat. Saute the
onion and garlic until the onion is soft, about 3 minutes. Add
the zucchini, basil, and oregano and continue cooking until it
softens, about 3 minutes.

Layer half of the vegetables and tomato slices on each slice of
bread. Lightly sprinkle with Parmesan cheese.

Broil for 1 minute or until the cheese melts. Pepper to taste.
