Vegetarian Wrap Sandwich
1/2 head well rinsed romaine, torn into bite size pieces
1/2 small red onion, sliced into thin rings
1 cucumber, chopped, seeded and peeled
2 sections White Waves' Italian flavored baked tofu, julienned
1 small carrot, shredded.
salt and pepper
Toss all this in a large bowl with your favorite dressing. Annie's
Goddess dressing, made with tahini is good. Season to taste.
Use a large whole wheat tortilla, lay a good amount of salad mixture
on and roll up like a burrito.
