Veggie Stuffed Pitas
Serving Size : 4

6 ounces hummus mix
1 small eggplant, about 1 pound
nonstick cooking spray
4 6-inch pita bread rounds, halved
14 ounces roasted red bell peppers, drained and sliced
1/2 teaspoon pepper
1/4 cup sliced ripe olives

Prepare hummus according to package directions, replacing 2
tablespoons oil with 2 tablespoons lemon juice. Set aside. Cut
off stem end of eggplant. Cut eggplant lengthwise into 3/4-inch
thick oblong slices. Place slices on a baking sheet coated with
cooking spray; broil 6 minutes on each side or until tender. Cut
eggplant into bite size pieces. Stuff each pita half with 1/4 cup
hummus, one-eighth eggplant, and one-eighth pepper slices. Sprinkle
with pepper, and top with olives.
