This is lovely and it really impresses meat eaters and kids.
8 oz self-raising flour (wholemeal and white both work)
4 oz sugar
1 heaped tsp baking powder
8 floz water
5 floz vegetable oil
1 heaped tbsp syrup, maple syrup or molasses (optional)
(Note: 8 oz =3D about 225 g and 8 floz =3D 1 cup)
1.) Grap a big microwave-proof bowl, (pyrex is perfect) and sift the =
first
three ingredients into it.
2.) Stir in the water and oil and mix well.
3.) Drop the syrup into the bowl, (if using) and ease it down to the =
bottom
with your spoon.
4.) Stretch cling film over the bowl and pierce a hole in the top. =
Microwave
on full power for 7-8 mins, then leave to stand for another 2 mins.
5.) Serve with vegan custard or soya cream.
Variations - add a handful of chocolate chips or sultanas during the =
mixing, or add ginger or cocoa powder with the flour and sugar.
Notes: I usually use a gluten free flour mix which works well and add the syrup = on the top after it had finished cooking.
