Tofu Scrambler 1 scallion a few strips of bell pepper 3 or 4 mushrooms 1 small tomato 2 oz tofu, mashed with fork turmeric paprika garlic powder or a garlic clove, minced red pepper flakes 1 tablespoon soy sauce 1 teaspoon sesame oil Chop onion, pepper, mushrooms, and tomato, and saute in nonstick skillet in a little bit of water. Add tofu, spices, soy sauce, and sesame oil. Stir in skillet, and cook for a few minutes until most of the liquid is absorbed. Serve with a slice of black bread.
Variation: Steam Brussels sprouts or broccoli in the microwave and serve the tofu scramble over that.
