Seitan

Mix 1 cup gluten powder with 7/8 cup water (1 cup minus 2 tablespoons)
by hand until you get a spongy dough. Put in a oiled loaf pan and
bake at 375F until dark brown on top (approx. 1 hr 15 min.). Gluten
will rise like loaf of bread and have shiny golden brown skin. If
after 30 minutes loaf begins to puff more than 2 inches above sides
of pan, pierce top in 3 places with knife. When done cut into 1/2"
slices (and cut these into cubes or strips if desired). To flavor,
boil in broth for 30 minutes. Place weight on gluten to keep
submerged while boiling. Can be used now but soak overnight for
best flavor.


Veg "Ham" broth

1/4 cup soy
2 tsp Kitchen Bouquet
2 tbsp nutritional yeast
1/2 cup chopped onion
1/4 tsp rubbed sage
1/2 tsp fresh ground black pepper
1/2 tsp oregano
1 tsp garlic powder
1 1/4 tsp. liquid smoke
1 tsp vegetable oil
2 cups water
1 tsp sea salt

Combine everything and simmer for 5 minutes then cook gluten in it.
