Apricot and Passion Fruit Soft Serve

1 cup chopped dried apricots
297 g packet silken tofu drained
3/4 cup soy drink
1/4 cup sugar
1 ripe banana, mashed
1/4 cup slivered almonds toasted
pulp of 3 passion fruit

Place apricots and 1/2 cup of water in small saucepan over medium
heat. Cover and simmer for 3 minutes or until soft (or microwave,
uncovered, on HIGH for 3 minutes. Leave to cool.

Process the apricots, tofu, soy milk, sugar and banana in a food
processor until smooth.

Pour the mixture into a cake tin, cover with foil and freeze for
several hours or until partly set.

Transfer to a food processor; process in batches until smooth (or
churn in an ice-cream maker for 20 minutes). Fold in the almonds
and passion fruit pulp. Serve immediately. Makes 6x1/2 cup serves.
